Eloquent wine characterizations.

Callaway winery has a vast, industrial feel to it, from the parking lot to the tasting room and in between. Well set up for large crowds to enjoy the expansive views.

Tasting was delightful, but what I enjoyed the most were descriptions of a few of their wines.

…it’s a bit of a chameleon.
…dusting of nutmeg … a wine that’s exotic.
…palate of uncompromising tannins.

What I learned at this winery:

Callaway’s grapes go through a 2 press process. For comparison, most “2 buck chuck” goes through 8 to 10 presses.

Mourvedre is pronounced moorvad or more-VED, with just a tiny emphasize on the r.

Wild yeast clings to surfaces in a vineyard, winery, and on equipment. When you pick your grapes and let them sit, eventually they will ferment as the indigenous yeast on the grapes. Callaway makes a Wild Yeast Syrah.
