A unique adventure.

Peltzer is one of Temecula’s newest wineries, having been in business for just 7 months, as of May 2017. It is a visual delight. Upscale, modern farmhouse style, with an enchanting twist. They are unique in their pairing of wines with fresh bread. The concept simulates a farm to fresh connection between wine and food.

Things I learned at the winery:

Temecula wineries are more crowded than other wine regions. It has the most people in surrounding areas — 26 million in a 90 minute radius.

Aeration of young wine helps it breath. You shouldn’t aerate wine older than 2008.

A refractometer measures the amount of sugar, measured in Brix, in the juice of grapes, which helps determined ripeness of the fruit.

The pock marks on the stainless steel tanks housing wine, provide the refrigeration for the fermenting juice.

When fermenting red wine they start out in lugs, with pitch forks to prod the juices out, instead of Lucille Ball’s method of stomping.

When you “volitize/swirl" the esters, you intensify the bouquet of wine. Esters are created by the reaction of acids and alcohols when you swirl wine in your glass. The better you can smell, the better you taste.
